Cheese is one of the most frequently wasted foods in the UK. But it has such a long shelf life and is so versatile so why are we throwing so much of it in the bin? These cheese biscuits are the easiest snack you could ever bake – it’s just equal quantities of flour, butter and cheese. I used wholemeal flour as it needed using up but also increases the fibre content, making them slightly healthy.
These are really moreish and delicious with a chutney. Tied up with some ribbon or put in a jar, they make a lovely homemade Christmas gift, too!
Makes about 24-28
Ingredients
200g plain white or wholemeal flour
200g butter
200g mature cheddar, finely grated
Optional: 1 tsp paprika or mustard powder
Method
- Preheat the oven to gas mark 6.
- Combine all ingredients by hand or in a food processor until a dough is formed.
- Roll the dough into a ball, wrap in cling film and chill in the fridge for about 30 minutes.
- On a floured surface or between two sheets of greaseproof paper, roll out the dough to about a 5mm thickness.
- Using a cookie cutter, cut out your biscuits until all of the dough is used up.
- Bake in the oven for 12-15 minutes.
- Let the biscuits cool a little on the tray before transferring to a cooling rack. They’ll be a little soft at this point but will harden once completely cool.
- Enjoy on their own or with some tangy chutney.
