Bubble & Squeak

Bubble and squeak is a Christmas leftovers classic and quite possibly even better than the actual Christmas dinner, in my opinion. Outrageous statement, I know, but that is just how much I love this dish. My favourite of roast potatoes mashed together with sprouts, carrots, parsnips and some scrumptious stuffing topped with a perfectly poached egg, the vibrant yolk dribbling down the side of the crispy patty… This is great for breakfast, brunch, lunch or even dinner and one of the most delicious ways of using up Christmas dinner leftovers.

I usually try and make sure there’s a bit more potato than the other ingredients to bind the mixture together.

Ingredients

Leftover cooked vegetables

Leftovers roast potatoes

1 egg

Leftover stuffing (optional)

Method

  1. Roughly mash or chop up your leftover veg, spuds and stuffing.
  2. Heat some butter or oil in a small frying and pan and add all the veg and stuffing if you’re using it.
  3. Mix the ingredients well and then flatten into a big patty using a fish slice or fork. Try and compress them all together as much as you can. Fry for a few minutes.
  4. Once the bottom is golden and crispy, turn the patty over bit by bit and flatten again to crisp up on the other side.
  5. Poach the egg.
  6. Once the bubble and squeak is crispy on both sides, serve and enjoy!
